Have you began to make cookies and found that you were out of flour, vanilla, and eggs? This would be the time to pull out the Substitutions List from your recipe box or favorite cookbook – if you could find them. They are easily misplaced and not the easiest to memorize unless you use them daily.

After a little experimenting, I came up with a great

 Mexican Banana Oatmeal Cookie

recipe that uses corn masa instead of flour.  Click on the link to see what two fruits can be used instead of eggs! And with flavorful fruit, you can eliminate the vanilla. The masa is a bit sweeter than flour, requires less sugar, and rids you of the bitterness often left by the baking powder or soda in the cookie recipe.

The cookies can be baked in the oven or fried on both sides in a heavy skillet to make a delicious batch of fun food that is healthier for you. It’s a winner!
